Recipe of the Month - Gingerbread French Toast

Here is a great recipe to use when hosting a holiday brunch with family and friends. It’s easy to make and always receives rave reviews! It’s best served when warm with hot caramel sauce drizzled over top.

 

Gingerbread French Toast with Caramel Drizzle

Baked Gingerbread French Toast with Caramel Sauce
6 eggs
2 cups of white milk
1/4 tsp salt
1/4 cup brown sugar
1 tbsp of all purpose flour
1 tbsp of gingerbread spice **please see below for recipe**
2 loafs of white (or raisin) bread

Instructions:
Grease 8 x 10 baking dish with butter. Don’t be shy with the butter - it adds great flavour.
Cut and cubed bread into 1” pieces
Whisk/blend eggs, milk, brown sugar, flour and gingerbread spice ingredients together until frothy.

Place cubed bread into baking dish. Pour liquid mixture over bread. Cover the baking dish. Bake for 30 mins at 350 F. Uncover the baking dish. Continue baking for another 30 mins at 375 F. Remove from oven, let cool.

Caramel Sauce
1/2 cup butter
2 cups brown sugar
1 tsp vanilla
1/4 cup of cream or half & half

Instructions:
Melt butter in sauce pan over medium heat, add brown sugar and vanilla. Whisk together until butter and sugar have melted together. Add cream. Continue to gently whisk until mixture thickens but does not become stringy. Please note: if sugar is cooked at too high of temperature or for too long, it will begin to harden thus making it difficult to pour over Gingerbread Toast.

Gingerbread Spice
1/4 cup cinnamon
1/4 cup ground ginger
2 tbsp allspice
2 tbsp nutmeg
2 tbsp ground cloves
